I don't always use ricotta when I make lasagna because I am a cheapskate, so if you want to make an equally delicious version using Bechamel Sauce, feel free to sub this in.

Ingredients:

For the Meat Sauce:

  • 1 lb (450g) ground beef or turkey

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 can (6 oz) tomato paste

  • 1 can (15 oz) tomato sauce

  • 1/4 cup red wine (optional, but you get to drink the rest, so I say go for it)

  • 2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)

  • 1 teaspoon dried oregano

  • 1 teaspoon sugar

  • 1 cup of milk

  • Salt and pepper to taste

For the Ricotta Mixture:

  • 2 cups ricotta cheese

  • 1 large egg

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

  • Salt and pepper to taste

For the Lasagna:

  • 1 box Jovial Gluten Free Pasta Sheets

  • 4 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese


Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Set the Mood: Put on some Italian music to get into the spirit. Think Dean Martin or Pavarotti—whatever makes you feel like you’re in a little trattoria in Rome.

  3. Prepare the Meat Sauce: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat. Pour in your cup of milk and stir until it evaporates. This will tenderize the meat and give it that cooked all day texture. Add the chopped onion and minced garlic, and cook until the onion is translucent. Stir in the crushed tomatoes, tomato paste, tomato sauce, red wine (if using), basil, oregano, sugar, salt, and pepper. Bring to a simmer and let it cook for about 30 minutes, stirring occasionally. Now, here’s the best part: pour yourself another glass of that red wine and enjoy a few sips while your sauce simmers. Chef’s privilege!

  4. Prepare the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, egg, Parmesan cheese, parsley, salt, and pepper. Mix well and set aside. OR if you are using Bechamel sauce instead, it's time to knock this up.

  5. Assemble the Lasagna: Spread a thin layer of the meat sauce at the bottom of a 9x13-inch baking dish. Place a layer of pasta sheets over the sauce. Spread half of the ricotta mixture over the pasta, then sprinkle with 1 cup of shredded mozzarella cheese. Repeat the layers (meat sauce, pasta sheets, ricotta mixture, mozzarella) until all ingredients are used up, ending with a layer of meat sauce on top. Sprinkle the remaining 2 cups of mozzarella cheese and the 1/2 cup of grated Parmesan cheese over the top or a thick, silky layer of Bechamel sauce if you're going that route. Or both! It's a party. Have another glass of wine.

  6. Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the underside of the foil with a bit of cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 25 minutes, or until the cheese is melted and bubbly. Use this time to finish off that glass of wine and perhaps pour yourself another. Cooking is thirsty work!

  7. Cool and Serve: Let the lasagna cool for about 10-15 minutes before slicing and serving. This helps it set and makes it easier to cut into neat pieces. Sing along to “That’s Amore” as you slice.
