Gluten Free Greek Chicken Kebabs: A Taste of the Mediterranean


Hey there, flavor fanatics! Today, we're taking a culinary trip to the sun-soaked shores of Greece. We're talking juicy, marinated chicken breast pieces, skewered and grilled to perfection. Yes, you guessed it – we're making Greek Chicken Kebabs! These bad boys are packed with herbs, lemon, and garlic, giving you a bite that's bursting with Mediterranean magic. Let’s get our Greek on!


Chicken Kebabs
Gluten Free Greek Chicken Kebabs

Ingredients

For the Marinade):

  • 1 1/4 cups olive oil

  • 3/4 cup fresh lemon juice (about 3 large lemons)

  • 10 cloves garlic, minced

  • 1/2 cup fresh oregano, chopped (or 1/3 cup dried oregano)

  • 1/2 cup fresh parsley, chopped

  • 3 tbsp paprika

  • 3 tbsp ground cumin

  • 1.5 tbsp salt

  • 1 1/2 tbsp black pepper


For the Kebabs:

  • 5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

  • 3 large onions, cut into wedges

  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes before using)


Directions

  1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, parsley, paprika, cumin, salt, and black pepper. Make sure everything is well combined and fragrant.

  2. Marinate the Chicken: Add the chicken cubes to the bowl and toss to coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes, but preferably 2 hours. If you can let it marinate overnight, even better – the flavors will be even more intense.

  3. Preheat the Grill: Preheat your grill to medium-high heat. If you’re using an oven, preheat to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper.

  4. Assemble the Kebabs: Thread the marinated chicken pieces onto the skewers, alternating with pieces of onion. Pack them tight, but not too tight – you want everything to cook evenly.

  5. Grill the Kebabs: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. If using the oven, bake for 20-25 minutes, turning once, until the chicken is fully cooked and the onions are tender.

  6. Serve: Remove the kebabs from the grill (or oven) and let them rest for a few minutes. Serve them hot, garnished with extra lemon wedges and a sprinkle of fresh parsley.
