Gluten-Free British Bangers Recipe: Bringing a Taste of Home to Your Table

Hello, Gluten Free and Giggly gang! Ready for a culinary trip across the pond? Today, we’re diving into the land of tea, crumpets, and, most importantly, bangers.


Bangers traditionally contain "rusk" which is a breadcrumb-like filler that contains the G-word. If you’re craving a taste of classic British fare without the gluten, you’re in for a treat. This Gluten-Free British Bangers Recipe is relatively easy to make and full of flavor, perfect for breakfast, lunch, or dinner. You can adjust the herbs but one that you shouldn't skip is mace which gives them the classic banger flavor. You are unklikely to find it in an American grocery store but you can get it on Amazon here.


You may need a second pair of hands if you are planning on grinding your own meat or stuffing them into casings. I like to press a small child into service for this.


If you want to make a quick cheat's version then buy the equivalent weight of premade sausage meat and just add the herbs (but skip the salt). You can also skip the step of stuffing them into casings and just hand roll them. They won't look as attractive but will still taste delisious. If you have some GF puff pastry in the freezer you could also use that mixture to make delicious sausage rolls!

Ingredients:


  • 4 pounds boneless pork shoulder , cut into 1/2 inch pieces and put in freezer for 45 minutes prior to grinding

  • 1 pound pork back fat , cut into 1/2 inch pieces and put in freezer for 45 minutes prior to grinding

  • 1 cup crushed ice 2 to 2 1/2 cups ice cold water , give or take as needed

  • 1 cup coarse homemade GF breadcrumbs. Just pop the bread in the toaster or dry it out in the oven and run through the food processor. Store bought GF crumbs won't work.

  • 2 1/2 tablespoons salt

  • 1 1/2 tablespoons freshly ground white pepper

  • 1 1/2 tablespoons minced fresh sage

  • 2 teaspoons onion powder

  • 2 teaspoons ground ginger

  • 2 teaspoons ground mace

  • 1 teaspoon ground nutmeg

  • 32mm natural hog casing, 15-20 feet , soaked in warm water and thoroughly rinsed


Instructions:

  1. Prep Your Ingredients:

  • First, soak your natural pork/hog casing in warm water to make it pliable. Then scrub your sink well and fill with cold water. Hold the casings open one at a time and allow the water to run all the way through. This looks pretty cool-like ghost sausages!

  • Then in a large mixing bowl, combine the pork shoulder, pork back and crushed ice. Run them through your grinder on a medium setting. Then freeze for 30mins, mix in the herbs and spices and run it through again on the fine setting.

  1. Stuff the Sausages:

  • Set up your sausage stuffer or a piping bag fitted with a large nozzle. Carefully thread the soaked casing onto the nozzle, leaving a bit hanging off the end to tie.

  • Begin filling the casing with the meat mixture, being careful not to overfill. Once you’ve filled the casing, twist the sausages into links of your desired size.

  • Tie off the ends of the sausages and poke any air bubbles with a needle to prevent bursting during cooking.

  1. Chill the Bangers:

  • Place the sausages on a plate and cover them. Let them chill in the refrigerator for about 30 minutes to help them firm up.

  1. Cook the Bangers:

  • Heat a large skillet over medium heat. Add the bangers and cook them for about 10-12 minutes, turning occasionally to ensure they brown evenly on all sides.

  • If you prefer, you can also bake them in the oven. Preheat your oven to 375°F and bake the bangers on a baking sheet lined with parchment paper for about 20-25 minutes, or until they are cooked through.

  • Or your third option is grilling them using these amazing skewers that my husband disapproves of but did agree to be photographed with (see below).

  1. Serve and Enjoy:

  • These bangers are perfect served with a side of mashed potatoes and a generous helping of onion gravy. Or, for a traditional British breakfast, pair them with eggs, bacon, grilled tomatoes, mushrooms, gluten-free toast, and baked beans.
