Hey there, Gluten Free and Giggly gang! Today, we're diving into the world of desserts with a cake that’s light, fluffy, and oh-so-delicious—It's is my Gluten-Free Angel Food Cake Recipe. This treat is so divine, it’ll have you singing with joy. And the best part? We’re using Fioreglut flour, the gluten-free flour that’s practically magic in a bag.

But first, a little backstory. I recently bought a mountain of organic berries, thinking my kids would love them in their lunches. But annoyingly they keep feeding them to the chickens. As cute as it is to see our backyard cluckers feasting on organic goodness, I’m not looking to turn my egg production into a luxury business at $100 per egg. So, I need to use up these berries before the kids throw them all into the coop! This recipe technically uses the berries twice as the chickens ate half of them already and then turned them into the eggs that I just used in the cake.


Ingredients:

  • 1 cup Fioreglut flour

  • 1 1/2 cups granulated sugar, divided

  • 12 large egg whites, at room temperature (or 360ml of Liquid Egg Whites if you ain't got time for that)

  • 1/2 teaspoon salt

  • 1 1/2 teaspoons cream of tartar

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon (optional, but highly recommended)

  • Jar of Jam or preserves (also optional)

  • Fresh organic berries for topping (before the chickens get them!)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Make sure you have an ungreased 10-inch tube pan ready. Angel food cake needs to cling to the sides as it rises, so don’t grease it!

  2. Sift the Dry Ingredients: Sift the Fioreglut flour with 3/4 cup of the sugar four times. Yes, four times. This helps to keep the cake light and airy.

  3. Beat the Egg Whites: In a large bowl, beat the egg whites with the salt and cream of tartar until foamy. Gradually add the remaining 3/4 cup of sugar, a tablespoon at a time, beating on high until stiff peaks form. This means the peaks stand up straight when the beaters are lifted out of the mixture.

  4. Fold in the Flour Mixture: Gently fold in the sifted flour mixture, a little at a time, into the egg whites. Use a spatula and fold carefully to maintain the airiness. Add the vanilla extract and lemon zest, folding in gently.

  5. Bake: Pour the batter into the tube pan and gently smooth the top. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  6. Cool the Cake: Remove from the oven and immediately flip the pan upside down. This keeps the cake from collapsing as it cools. If your tube pan doesn’t have feet, you can invert it over the neck of a bottle. Don't worry, the cake won't fall out, it should be stuck in there pretty good. So yeah, good luck cleaning it! That's a probem for later though...

  7. Remove the Cake from the Pan: Once completely cool, run a knife around the edges to release the cake from the pan. Turn it out onto a serving plate.

  8. Top with Berries: Just before serving, top your angel food cake with those delicious organic berries. You can add a dusting of powdered sugar if you’re feeling fancy. Or do what I like to do which is to warm up a jar of jam and pour it over the top.
