Gluten free focaccia made with Fioreglut Flour and Za'atar Topping

It might even be better than sex (depending on the skills of your latest lover, of course). We're talking about a focaccia bread made with Fioreglut flour from Italy—yes, that magical gluten-removed wheat starch flour that’s certified gluten-free and celiac-safe in the EU. It's expensive but worth it, I swear!

This focaccia has a crisp crust and a springy, chewy texture that’ll make you wonder if you accidentally baked regular bread. I like to give it a generous shake of green za'atar before baking to add a zesty, herby kick and serve it at parties with a selection of oils and vinegars for dipping. Gluten-Free Focaccia with Green Za'atar

Ingredients:

  • 500g (about 4 cups) Fioreglut flour

  • 475ml (about 2 cups) warm water

  • 10g (about 2 1/4 tsp) dry yeast

  • 50ml (about 1/4 cup) olive oil (plus extra for drizzling)

  • 35g (about 2 tbsp) salt

  • 2 tablespoons green za'atar

  • Coarse sea salt (for sprinkling)

Instructions:

  1. Mix the Dough: Throw all the ingredients into your stand mixer and let it do the hard work. Mix until you have a smooth, sticky dough. No need to knead it like it owes you money; just mix until combined.

  2. Prep the Pan: Line a baking tray with parchment paper. Pour the dough into the tray and smooth it out a bit.

  3. Stretch and Dimple: Now for the fun part. Cover your hands with more oil than a male stripper at a bachelorette party and stretch the dough out to fill the pan. Then, stab it all over with your fingers to create those signature focaccia dimples. This is your chance to take out some frustration!

  4. Second Rise: Cover the dough and let it rise for about 40 minutes. Use this time wisely—perhaps contemplate life, watch cat videos, or plot your next kitchen adventure.

  5. Preheat and Top: Preheat your oven to 220°C (425°F). Drizzle more olive oil on top, sprinkle generously with green za'atar, and finish with a pinch of coarse sea salt. It’s like dressing up your focaccia for a night out.

  6. Bake: Pop the focaccia in the preheated oven and bake for 35-40 minutes, or until the crust is golden and crisp. The aroma will drive you wild, but stay strong.
